Shredded Pork Burritos – Slow Cooker

I have been making this for a lonnnng time. It is my recipe, it’s super easy to make, and it slow cooks while you are at work, or sleeping, or fishing.. You get the idea. I know my crockpot is from the 70’s. Don’t judge, it works really well, why mess with a good thing? Please do not add cumin to this. If you do I will call the cops. 🙂

Shredded Pork Burritos

1 large boneless pork loin
3 potatoes
2 bell peppers sliced thin (I use one green and one red)
2 onions sliced thin
1 bunch green onion sliced thin
1 jar of Pace salsa
2 cans diced green chili
juice from 2 limes
2-4 garlic cloves
salt
pepper
2 tbsp GOOD chili powder

Peel potaoes and cut them into small chunks. Put them on the bottom of your slow cooker, and place loin on top. Put all seasonings on top of pork loin, including garlic. Put onions, green chili and bell peppers on top of the loin, and pour the entire jar of salsa over it. Then pour the lime juice on top of that. I layer everything this way so that as everything cooks, the potatoes get a lot of flavor from the juices, as well as the loin. Cook for 8 to 12 hours on auto-shift, or low. Do not stir for 8 hours.

Serve as burritos with cheese and sour cream.
TO make it hotter: Add jalapenos to the bell peppers and onions, as well as cayenne.
