Tomato Bisque w/ Turkey and Havarti Puff Pastry

002

Cook time: 30 minutes

Quick Tomato Bisque

2 cans crushed tomatoes
1 can diced tomatoes w/onion and garlic
1/2 cup chopped fresh basil
4 cloves minced garlic
1 tsp oregano
1 tbspn balsamic vinegar
1/3 cup sour cream
salt and pepper
Romano cheese

Combine everything except sour cream into a medium or large pot.
Let simmer on low for 20 minutes, stirring often. Add sour cream, turn off and let sit for ten minutes. While you are cooking the bisque, prepare the puff pastry sandwiches.

Turkey and Havarti Puff Pastry

1 or 2 sheets of puff pastry
2 slices havarti
4 slices of deli turkey (I used the oven maple flavor)

Gently unroll the puff pastry, place the havarti and turkey in and roll it up. Do not overfill, or it will become gooey in the middle. Pinch the ends closed, place on parchment or foil and bake at 400 for 30 minutes. You can brush the top with egg wash if you want.
Top bisque with romano, salt and pepper to taste.
